Macaroni Salad
This sweet macaroni salad is a staple at my house in the summer months!
Ingredients:
- 1 pound elbow macaroni
- 1/4 cup chopped carrot
- 1/3 cup chopped green pepper
- 2 tablespoons finely diced onion
For the Dressing:
- 3 tablespoons vinegar
- 3/4 cup sugar
- 1/2 cup sweetened condensed milk
- 1 cup mayonnaise
- 2 teaspoons dried celery
- 1 teaspoon salt
Instructions:
How to cook Macaroni Salad
- In a large bowl, combine dressing ingredients and stir well. Set aside.
- Cook macaroni to al dente, according to package directions.
- Chop carrots, green pepper, and onion. Add to the dressing mixture and stir.
- Drain macaroni well and rinse in cold water. Add to dressing and vegetables and mix.
- Cover and refrigerate for at least 4 hours or over night. This salad tastes best when it has time to sit and chill.
